    Brown the meat

    Heat a large skillet over medium-high heat. Add 1 tablespoon oil. When hot, add the chopped onion and sauté 3–4 minutes until translucent. Add the ground beef (or turkey) and cook, breaking up with a spoon, until browned and no longer pink, about 6–8 minutes. Drain excess fat if desired.

    Add aromatics and seasoning

    Stir in the minced garlic and cook 30 seconds until fragrant. Sprinkle in the taco seasoning, then add the drained diced tomatoes and drained beans. Pour in 1 cup broth (or water). Stir to combine and bring to a simmer.

    Reduce heat to low and simmer 5–8 minutes until the mixture thickens slightly and flavors meld. Taste and adjust salt and pepper. Keep warm while you prepare tortillas and toppings.

Rice (optional)

    Prepare cilantro-lime rice

    If using rice, fluff 1 cup cooked rice with a fork. Stir in 1 teaspoon lime juice and 2 tablespoons chopped cilantro. Season with a pinch of salt and set aside. This can be made in advance.

    Warm the tortillas

    Warm the flour tortillas to make them pliable: wrap in a slightly damp kitchen towel and microwave 30–45 seconds, or heat individually in a dry skillet over medium heat 20–30 seconds per side until warm and lightly toasted. Keep wrapped to stay warm.

    Assemble the burritos

    Lay one warm tortilla flat. Spoon about 1/3 to 1/2 cup of the meat-and-bean filling down the center. Top with about 2 tablespoons of cilantro-lime rice (if using), 2–3 tablespoons shredded cheese, a small handful (about 1/3 cup) shredded lettuce, 2 tablespoons diced tomatoes, 1–2 tablespoons sour cream, 1–2 tablespoons salsa, and 1–2 tablespoons guacamole or sliced avocado. Sprinkle with chopped cilantro and a few dashes of hot sauce if desired.

    To fold: fold the short sides over the filling, then fold the bottom up over the filling and roll tightly toward the top to create a sealed burrito. Place seam-side down on a skillet and toast 1–2 minutes per side over medium heat to seal and lightly crisp, if desired.

    Repeat assembly with remaining tortillas and ingredients. Serve immediately with extra salsa, sour cream, and hot sauce on the side.
