Shrimp and Coating
Prepare shrimp
Pat the shrimp dry with paper towels. If shrimp are large, cut into bite-size pieces (about 1- to 1.5-inch). Drying helps the coating adhere and prevents oil splatter.
Make dry mix
In a shallow bowl or plate, whisk together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until evenly combined.
Coat shrimp
One by one, dip each shrimp into the beaten egg, letting excess drip off, then dredge in the flour mixture, pressing gently so the coating adheres. Place coated shrimp on a tray and let rest 5 minutes to set the crust.
Fry shrimp
Fry shrimp in small batches (do not overcrowd) for 1.5–2.5 minutes per batch, turning if necessary, until golden and crisp and shrimp are opaque. Use a slotted spoon to transfer fried shrimp to a paper towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) if needed while finishing batches.
Spicy Mayo Sauce
While shrimp are resting or frying, whisk together mayonnaise, sriracha, optional gochujang (or chipotle paste), lime juice, honey, salt, and black pepper in a small bowl until smooth and balanced. Taste and adjust heat (more sriracha) or sweetness (more honey) as desired.
Assembly & Serve
Toss shrimp in sauce
Place the hot fried shrimp in a large bowl. Spoon about 3/4 of the spicy mayo over the shrimp (reserve remaining sauce for drizzling or dipping). Gently toss until shrimp are evenly coated but still crisp. Work quickly so the coating doesn't sog.
Plate and garnish
Arrange the coated shrimp bites on a serving platter or in small individual spoons/plates. Sprinkle thinly sliced jalapeños, sliced green onions, chopped cilantro, and toasted sesame seeds over the top. Serve with lime wedges and the reserved spicy mayo on the side.
Serving suggestion
These bites are best served immediately while crisp. They make a great appetizer or snack alongside cold beer or a crisp white wine.
