Prepare Bacon & Pineapple

Cook bacon

In a skillet over medium heat, cook 2 strips of bacon until crisp, turning occasionally, about 8–10 minutes. Transfer to a paper towel-lined plate to drain and keep warm.

Caramelize pineapple with teriyaki

Pat the pineapple ring dry. In the same skillet (drain excess bacon fat leaving about 1 teaspoon, or wipe skillet and add 1 tsp neutral oil), heat over medium-high. Add pineapple ring and cook 1–2 minutes per side until lightly browned. Brush both sides with 1 tbsp teriyaki sauce during the last minute of cooking. Remove and keep warm.

Form & Cook Patty

Form the 10 oz ground beef into a single patty about 3/4–1 inch thick, making a slight dimple in the center with your thumb to prevent doming. Handle lightly to avoid compacting the meat.

Season both sides of the patty with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper just before cooking.

Heat a heavy skillet or grill over medium-high heat. Add 1 tbsp neutral oil if using a skillet. When hot and shimmering, place the patty in the pan. Cook for about 4–5 minutes on the first side without pressing, until a brown crust forms.

Flip the patty and cook 4–6 minutes on the second side for medium (internal temp ~140–145°F / 60–63°C). During the last 1–2 minutes of cooking, place 1 slice of Swiss cheese on the patty and cover the pan (or close grill lid) to melt cheese.

Toast Buns & Assemble

While the patty finishes, spread 1 tbsp butter on the cut sides of the bun and toast them, cut-side down, in a clean skillet or on the grill over medium heat until golden, about 1–2 minutes.

Spread 1.5 tbsp barbecue sauce on the bottom bun. If using mayonnaise, spread 1 tsp on the top bun.

Place the Swiss-topped burger patty on the bottom bun. Top the patty with the teriyaki-brushed pineapple ring, then 2 strips of crisp bacon (break one strip if needed to fit), then the tomato slices, and 3 thin red onion slices. Add lettuce and pickles if using.

Finish with the top bun and press gently to set. Let the assembled burger rest 1 minute before serving so juices redistribute.
