Prepare the Potatoes

Preheat your oven to 400°F (200°C). Scrub the russet potatoes under cold water and pat them dry. Prick each potato several times with a fork.

Bake the Potatoes

Rub the potatoes with olive oil, sprinkle with salt, and place them directly on the oven rack. Bake for about 45-60 minutes or until fork-tender.

Scoop Out the Flesh

Once the potatoes are cool enough to handle, cut them in half lengthwise. Carefully scoop out some of the potato flesh, leaving about 1/4 inch of potato around the skin.

Season and Prepare the Skins

Brush the inside of each potato skin with olive oil, and season with salt and black pepper. Place them on a baking sheet.

Add Toppings

Fill each potato skin with shredded cheddar cheese, crumbled bacon, and chopped green onions.

Bake Again

Return the loaded potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve

Remove from the oven and let cool slightly. Serve warm with a generous dollop of sour cream on the side.
