Marinate the Pork
In a large bowl, combine the sliced pork shoulder with garlic, dried oregano, cumin, paprika, chili powder, lime juice, salt, and black pepper. Mix well to ensure the pork is evenly coated. Cover and refrigerate for at least 4 hours, preferably overnight.
Prepare the Trompo
If using a vertical spit (trompo), thread the marinated pork slices onto the spit, alternating with slices of pineapple. If you don't have a spit, you can grill the pork on skewers.
Cook the Pork
Cook the pork on a grill or in an oven at 350°F (175°C) for about 1.5 to 2 hours, or until the pork is cooked through and has a nice char. If using a spit, ensure to rotate it regularly for even cooking.
Prepare the Tortillas
Warm the corn tortillas on a skillet over medium heat until pliable.
