    Add butter to the pot with the bacon fat. Once melted, add the diced onion and celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Potatoes and Flour

    Stir in the diced potatoes and flour, coating the vegetables. Cook for 2-3 minutes, stirring frequently.

    Add Liquids

    Pour in the clam juice and bring to a simmer. Cook for about 10 minutes until the potatoes are tender.

    Add Clams and Cream

    Stir in the chopped clams, heavy cream, thyme, salt, and black pepper. Simmer for an additional 5-10 minutes until everything is heated through.
