Step 1: Heat the Base

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Step 2: Whisk Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Step 3: Temper the Egg Mixture

Slowly pour the warm milk and cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. Once combined, return the mixture to the saucepan.

Step 4: Cook the Mixture

Cook over medium heat, stirring constantly until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.

Step 5: Chill and Add Flavor

Remove from heat, stir in vanilla extract, and let cool to room temperature. Refrigerate for at least 4 hours or overnight.

Step 6: Churn the Gelato

Churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.
