Preheat and prepare
Preheat your waffle iron according to manufacturer instructions to medium-high heat. Lightly brush or spray the plates with oil or nonstick spray just before cooking the first waffle.

Combine dry ingredients
In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon fine salt until evenly distributed.

Mix wet ingredients
In a separate medium bowl, whisk 2 large eggs until combined. Whisk in 1 1/2 cups whole milk, 1/2 cup buttermilk (or thinned yogurt), 6 tablespoons melted butter (cooled slightly), and 1 teaspoon vanilla extract until smooth.

Combine wet and dry
Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula or whisk until just combined; small lumps are okay. Do not overmix to keep waffles tender.

Rest the batter
Let the batter rest 5–10 minutes at room temperature. This hydrates the flour and activates the leaveners, giving a better texture.

If using chocolate chips, nuts, or berries in the batter, gently fold 1/2 cup mini chocolate chips or 1/2 cup chopped toasted nuts into the rested batter. If using delicate berries, fold in 1/2 cup gently to avoid breaking them — reserve extra berries for topping.

Cook waffles
For each waffle, pour the recommended amount of batter for your waffle iron (commonly 1/2 to 3/4 cup for standard irons; larger irons may require more). Close the lid and cook until the waffle is golden brown and crisp, about 3–6 minutes depending on your iron. Do not open too early — steam reduction indicates doneness. Use a fork to lift the waffle and check color if unsure.

Keep waffles warm
If making multiple waffles, keep finished waffles warm and crisp by placing them in a single layer on a wire rack set over a baking sheet in a 200°F (95°C) oven. Avoid stacking, which traps steam and softens them.

Serve waffles hot. Top with fresh berries, a dusting of powdered sugar, a dollop of whipped cream, chopped toasted nuts, and maple syrup to taste.
