Method

Preparation

  1. 1

    Bring to room temperature

Remove 3 strips of bacon from the refrigerator and let sit on the counter for 5–10 minutes while you prepare equipment. This helps the bacon cook evenly.

  2. 2

If using thick-cut bacon, pat each strip lightly with a paper towel to remove excess moisture for better crisping.

Pan-frying (crispiest, stovetop)

  1. 3

    Arrange and heat

Place a cold nonstick or cast-iron skillet on the stove. Arrange the 3 bacon strips in a single layer without overlapping. Set heat to medium-low. Starting in a cold pan allows fat to render slowly for even crisping.

  2. 4

    Render and turn

Cook the bacon for 6–8 minutes, turning every 1–2 minutes with tongs so both sides brown evenly and fat renders out. Adjust heat down if edges begin to burn or up slightly if there is no sizzle after a few minutes. For thinner bacon expect 6–7 minutes; for thicker bacon 8–10 minutes.

  3. 5

    Final crisp

When the bacon has reached your desired crispness (edges golden-brown and center firm), transfer strips to a plate lined with 2–3 paper towels to absorb excess fat.

Oven method (hands-off, evenly crisp)

  1. 6

    Preheat & prepare pan

Preheat oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil for easy cleanup and place a wire rack on the sheet. If you don't have a rack, place the bacon directly on the foil.

  2. 7

    Arrange & bake

Lay the 3 bacon strips in a single layer on the rack or foil. Bake for 12–18 minutes: about 12–14 minutes for thin bacon, 16–18 minutes for thick-cut, or until golden-brown and crisp. Rotate the pan once halfway through for even browning if your oven has hot spots.

  3. 8

    Drain

Remove from oven and transfer bacon to a plate lined with 2–3 paper towels to drain and crisp further.

Microwave method (quickest)

  1. 9

    Prepare

Line a microwave-safe plate with 2 layers of paper towel. Place bacon strips in a single layer on the paper towels and cover with another paper towel to prevent splatter.

  2. 10

    Microwave

Microwave on high for 2–4 minutes depending on thickness and microwave power: start with 2 minutes for thin bacon, add 30-second increments until desired crispness (typically 3–4 minutes). Let sit 30 seconds — it will crisp up as it cools.

Finish & serve

  1. 11

Season the drained bacon lightly with black pepper (about 1/4 tsp) if desired and, for a sweet glaze, brush or drizzle 1 tbs maple syrup or honey over the hot strips. Let sit 30 seconds for glaze to set.

  2. 12

Serve immediately while crispy. Discard used paper towels soaked with bacon fat and wipe pan with paper towels while still warm (or cool and refrigerate fat for other uses).
