Directions for Making Chocolate Cannoli
Prepare the Dough
In a large bowl, mix flour, sugar, cocoa powder, and salt. Make a well in the center and add the egg, butter, and white wine. Mix until a dough forms, then knead for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Roll and Cut the Dough
On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles (about 4-5 inches in diameter).
Form the Cannoli Shells
Wrap each circle around a cannoli tube and seal the edges with a little water. Heat oil in a deep pan to 350°F (175°C) and fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Prepare the Filling
In a mixing bowl, blend ricotta cheese with powdered sugar until smooth. Stir in chocolate chips.
Fill the Cannoli
Once the shells are cool, carefully remove them from the tubes. Use a pastry bag to fill each shell with the ricotta mixture.
Dip and Serve
Melt chocolate for dipping and dip the ends of each filled cannoli into the chocolate. Place on a cooling rack to allow the chocolate to set. Dust with additional powdered sugar before serving.
