Prepare the Beef Tenderloin Tips

Season the beef tenderloin tips with salt and black pepper.

Sear the Beef

In a large skillet, heat olive oil over medium-high heat. Add the beef and sear on all sides until browned, about 4-5 minutes. Remove the beef and set aside.

Make the Madeira-Thyme Jus

In the same skillet, add minced shallots and sauté until translucent. Add Madeira wine and thyme, scraping up any browned bits from the bottom. Simmer until reduced by half, about 5-7 minutes. Stir in butter and return the beef to the pan, coating it in the jus.

Prepare the Mashed Potatoes

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add milk and mash until smooth. Season with salt to taste.

Cook the Seasonal Vegetables

In a separate pot, steam the chopped seasonal vegetables until tender, about 5-7 minutes.

Plate the mashed potatoes, top with beef tenderloin tips and jus, and serve with seasonal vegetables on the side.
