Prepare the Pudding

Blend the Mangoes

Peel and chop the ripe mangoes. Place them in a blender and blend until smooth. Measure 2 cups of the mango puree.

Heat Coconut Milk

In a saucepan, combine the coconut milk and sugar. Heat over medium heat until the sugar dissolves, stirring occasionally.

Dissolve Agar-Agar

In a separate bowl, mix the agar-agar powder with 1 cup of water. Stir well and add it to the saucepan with the coconut milk mixture. Bring to a gentle simmer while stirring continuously for about 5 minutes.

Combine Mixtures

Remove the saucepan from heat. Stir in the mango puree and vanilla extract until well combined.

Set the Pudding

Pour the mixture into serving cups or bowls. Allow it to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until set.

Prepare the Topping

Cut Mango for Topping

While the pudding is setting, peel and slice an additional mango into thin slices for topping.

Chop Mint Leaves

Chop the mint leaves finely to use as a garnish.

Serve

Assemble the Dessert

Once the pudding is set, remove it from the refrigerator. Top each cup with fresh mango slices and a sprinkle of chopped mint leaves.
