Method

Green Tea

    Heat water

    Measure 2 cups (about 475 ml) of fresh filtered water. Heat the water until it reaches between 160°F and 180°F (70–80°C). If you don't have a thermometer, bring water to a gentle simmer and remove from heat immediately — do not let it come to a rolling boil.

    Preheat teapot or cup

    Pour a small amount of the hot water into your teapot or cup, swirl to warm the vessel, then discard that water. This helps keep infusion temperature steady.

    Steep tea

    Place 2 teaspoons of loose-leaf green tea (or 2 standard tea bags) into the teapot or cup. Pour the heated water over the tea. Steep for 1.5 to 3 minutes depending on desired strength and type of green tea: 1.5–2 minutes for delicate Japanese sencha/gyokuro, 2–3 minutes for Chinese gunpowder/longjing. Avoid oversteeping to prevent bitterness.

    Remove leaves

    After the chosen steep time, immediately remove the tea leaves or tea bags to stop extraction. If using loose leaves in a teapot, pour the tea through a fine strainer into cups.

    Adjust and serve

    Taste the tea. If desired, add up to 1 teaspoon of honey (or other sweetener) and a squeeze of lemon to taste. Stir gently and serve warm. Optionally let cool and serve over ice for iced green tea.

    Second infusion (optional)

    High-quality loose green tea leaves can be steeped again. For a second infusion, use water at the same temperature and steep for an additional 30–60 seconds longer than the first infusion, then pour and enjoy.
