1. Bring to room temperature

Remove turkey bacon from refrigerator 10–15 minutes before cooking to take the chill off. This helps it cook more evenly.

2. If using thicker-cut turkey bacon, pat slices dry with paper towel to remove excess moisture.

3. Heat the pan

Place a large nonstick or stainless-steel skillet over medium heat. Add 1 tablespoon of neutral oil or butter and let it warm until shimmering but not smoking (about 1 minute).

4. Cook the bacon

Arrange the turkey bacon slices in a single layer in the skillet without overlapping. Cook for 2–3 minutes on the first side until edges begin to brown. Flip each slice and cook 1.5–3 more minutes, adjusting time depending on thickness and desired crispness. Total cook time per side will be shorter than pork bacon; watch closely to avoid drying out.

5. Season and glaze (optional)

During the last 30–45 seconds of cooking, sprinkle black pepper evenly over the slices. If using brown sugar and smoked paprika, mix them and sprinkle lightly over the bacon or press gently so they adhere; the sugar will caramelize slightly. For a glazed finish, brush on a scant teaspoon of maple syrup and let it warm for a few seconds.

6. Drain and rest

Transfer cooked turkey bacon to a plate lined with paper towels to absorb excess fat. Let rest 1–2 minutes — resting helps the bacon firm up slightly.

Oven (alternative) — for larger batches

7. Preheat and prepare pan

Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lightly brush the rack with oil or spray with nonstick spray.

8. Arrange and season

Lay turkey bacon slices in a single layer on the rack. Lightly brush or spray with oil, then sprinkle with black pepper and optional smoked paprika and brown sugar if using.

9. Bake

Bake for 10–14 minutes, then flip slices and bake another 6–8 minutes, or until desired crispness is reached. Thicker slices may need more time. Watch closely the last few minutes to avoid over-drying.

10. Finish and rest

Remove from oven and transfer to paper towels to drain for 1–2 minutes. If desired, drizzle with a little maple syrup and sprinkle chopped parsley before serving.
