Whisk eggs
Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds). Set aside.

Sauté aromatics
Heat a nonstick 8–10 inch skillet over medium heat. Add 1 teaspoon olive oil. When shimmering, add the finely chopped shallot (about 1/4 cup). Sauté, stirring, until softened and translucent, about 2–3 minutes. Add 1 teaspoon minced garlic and cook 20–30 seconds until fragrant, taking care not to brown the garlic.

Cook spinach
Add 1.5 cups fresh baby spinach to the skillet. Using tongs or a spatula, toss and cook just until wilted, about 1–2 minutes. If excess liquid accumulates, drain or tilt the pan and spoon off any excess. Stir in 1 tablespoon chopped fresh dill (or parsley) and remove the spinach mixture to a small plate; wipe the skillet lightly with a paper towel if there is too much moisture.

Add feta
Crumble 1/2 cup feta cheese and set aside to add to the omelette later.

Heat butter for omelette
Return the same nonstick skillet to medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. Heat until the butter foams but does not brown.

Cook eggs
Pour the whisked egg mixture into the skillet, tilting the pan to spread the eggs evenly. Let the eggs set undisturbed for about 20–30 seconds. With a silicone spatula, gently push the cooked edges toward the center while tilting the pan so the uncooked egg flows to the edges. Repeat around the pan until the eggs are mostly set but still slightly glossy on top (about 1–2 minutes).

Add filling and fold
Distribute the wilted spinach mixture evenly over one half of the omelette. Sprinkle the crumbled feta over the spinach. Use the spatula to gently lift the other half of the omelette and fold it over the filling. Let cook for another 30–45 seconds to warm the filling and melt the feta slightly.
