    Combine liquids and oats

    In a medium saucepan, combine 1 cup water, 1 cup milk, and 1 cup rolled oats. Stir to combine so oats are evenly distributed.

    Add salt

    Stir in 1 teaspoon fine sea salt to enhance flavor.

    Cook

    Bring mixture to a gentle simmer over medium-high heat, then reduce heat to medium-low. Cook, stirring occasionally, for 8–10 minutes until oats are tender and most liquid is absorbed. For creamier texture, stir more frequently during the last 2–3 minutes.

Fruit & sweeteners

    Add dried fruit

    When the oats are about 2 minutes from done (still slightly loose), stir in 1 tablespoon dried cranberries and 2 tablespoons raisins so they plump while the oats finish cooking.

    Add fresh fruit (optional)

    If using grated apple or pear, stir in 1/2 cup now; it will soften and meld with the oats as they finish cooking.

    Sweeten

    Remove saucepan from heat and stir in 1 tablespoon pure maple syrup or honey to taste.

    Stir in 1/2 teaspoon ground cinnamon and 1/2 teaspoon vanilla extract. Taste and adjust: add a pinch of salt or additional maple syrup if desired.

    Let the oatmeal sit off the heat for 2 minutes to thicken and allow flavors to meld.

    Spoon the oatmeal into bowls and top with 2 tablespoons chopped toasted walnuts or almonds and 2 tablespoons plain yogurt or a splash of extra milk if desired. Serve warm.
