Prepare the Nutella
Spoon the Nutella into a microwave-safe bowl. Warm for 20–30 seconds at 50% power, then stir until slightly loosened but not hot. This makes it easier to spread and prevents tearing the bread.

Make the custard
In a shallow wide bowl or pie plate, whisk together the eggs, whole milk, heavy cream, vanilla extract, granulated sugar, and ground cinnamon until evenly combined and slightly frothy.

Assemble sandwiches
Lay out 4 slices of bread. Spread about 2–3 tablespoons of the warmed Nutella evenly on each slice, leaving a 1/4-inch border to prevent overflow. Top each with another slice of bread to make 4 sandwiches. Press gently to seal the edges.

Soak the sandwiches
Working one at a time, place a Nutella sandwich into the custard. Let it soak for 20–30 seconds per side, pressing lightly so the custard soaks into the bread but the sandwich does not fall apart. Allow excess custard to drip back into the bowl.

Heat the pan
Place a large nonstick or cast-iron skillet over medium heat. Add the unsalted butter and neutral oil. Heat until butter foams and begins to turn pale golden, about 1–2 minutes. The oil keeps the butter from burning.

Cook the French toast
Transfer the soaked sandwich to the hot skillet. Cook for 3–4 minutes per side, reducing heat slightly if the bread browns too quickly, until each side is deep golden brown and the center is warmed (the Nutella should be melted). Flip carefully with a spatula. If your skillet is small, cook in batches and keep finished sandwiches warm on a baking sheet in a 200°F (95°C) oven.
