Tapioca Pearls (Boba)

Boil pearls
Bring 4 cups water to a rolling boil in a medium saucepan. Add 1/2 cup dry tapioca pearls and stir immediately so they don't stick. When pearls float to the surface, reduce heat to medium and simmer uncovered, stirring occasionally, for 12–18 minutes until pearls are tender but still slightly chewy (follow package timing if different).

Rest and rinse
Turn off heat, cover the pot, and let the pearls sit for 10 minutes. Then drain pearls in a fine-mesh sieve and rinse briefly with cold water to stop cooking and remove excess starch.

Sweeten pearls
In a small bowl, combine 2 tablespoons water and 3 tablespoons granulated sugar (or adjust sweetness). Heat briefly until sugar dissolves, or stir until combined. Toss drained warm pearls in the syrup so they absorb sweetness and stay glossy. Keep covered until assembling drinks (pearls are best used within 2 hours).

Make mango puree
Place 1 1/2 cups chopped ripe mango and 1/2 cup cold water (or coconut water) into a blender. Add 2 tablespoons simple syrup and 1 teaspoon lime juice if using. Blend until very smooth, about 30–45 seconds. Taste and add more syrup if you prefer a sweeter, more syrupy mango.

Adjust texture
If the puree is too thick for sipping, thin with up to 2 tablespoons additional water (or coconut water) until it reaches a pourable consistency but still viscous enough to coat the straw lightly.

Assemble each drink
Divide the sweetened tapioca pearls between two serving glasses (about half will go in each). Add a few fresh mango cubes on top of pearls if desired. Pour about 1/3 to 1/2 cup mango puree into each glass (adjust to taste). Add a generous scoop of ice (about 1/2 cup per glass). Pour the tea + milk mixture over the ice to fill the glass, leaving a little room for stirring. Stir gently to integrate some mango puree, or leave layered if preferred.

Finish and serve
Top with a few mint leaves if using. Serve with wide boba straws and enjoy immediately. If serving later, keep pearls and mango puree refrigerated separately and rewarm pearls briefly in hot water before using (then toss with syrup).
