Cinnamon Bun Dough & Filling

1. Prepare filling

In a small bowl combine the softened butter, brown sugar, ground cinnamon, and vanilla extract until a spreadable paste forms. Set aside.

2. Unroll and re-roll (optional for larger buns)

If using individual pre-rolled cinnamon rolls in cups, unroll them gently on a lightly floured surface to expose the spiral. Spread a thin layer of the prepared cinnamon filling over the unrolled dough, then roll back up tightly to form a new log. This step is optional — you may also grill the pre-formed rolls whole. If re-rolling, divide into 12 equal pieces and shape as desired.

3. Preheat grill

Preheat a gas grill to medium heat (about 350°F / 175°C) or prepare charcoal for medium heat. Brush the grill grates lightly with vegetable oil to prevent sticking. If using a grill pan, preheat it on medium heat and oil lightly.

4. Prepare buns for grilling

If you kept the rolls whole from the package, gently press the top of each roll to flatten slightly to a 1/2"–3/4" thickness so they make good contact with the grate. Brush the outsides lightly with the melted butter.

5. Grill the buns

Place the cinnamon buns cut-side down if re-rolled, or bottom-side down if whole, directly onto the preheated grill grates. Close the lid and grill 3–4 minutes until the bottoms are golden brown and have good grill marks. Open the lid and using a spatula, gently flip each bun and grill the other side 2–3 minutes until golden and cooked through. Watch carefully to avoid burning; adjust heat as needed. Total grilling time per bun: about 5–7 minutes.

6. Finish and glaze

Remove buns from the grill and place on a platter. While still warm, drizzle or spread the icing from the package over each bun so it melts into the spirals. Optionally sprinkle toasted chopped nuts and a light dusting of powdered sugar. Serve warm.

7. Notes on indirect grilling (alternative)

If buns are browning too quickly, move them to an indirect-heat area of the grill (cooler side) to finish cooking through for 3–5 minutes with the lid closed, then glaze as above.
