Grilled chicken filling

    Prep chicken

    Slice the chicken breast into a 1/2 cm thick cut or into thin strips for faster, even grilling. Pat dry with paper towel.

    Season

    In a bowl, toss the chicken with 1 tablespoon olive oil, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt and 1/4 tsp black pepper until evenly coated. Let rest 5 minutes.

    Grill chicken

    Heat a grill pan or skillet over medium-high heat until hot and lightly smoking. Add the chicken pieces and grill 2-3 minutes per side (depending on thickness) until internal temperature reaches 74°C (165°F) and exterior has grill marks. Remove to a plate and let rest 3 minutes, then chop into bite-sized pieces.

    Prep vegetables

    While the chicken rests, finely dice 1/2 red bell pepper and 1/4 small red onion. Thinly slice the scallion greens. If using parsley, chop finely.

    Optional quick sauté

    If you prefer softened peppers/onions, heat the grill pan or a small skillet over medium heat, add a teaspoon of oil, and sauté diced pepper and onion 2-3 minutes until slightly softened but still with bite. Remove from pan.

Omelette base and assembly

    Beat eggs

    In a bowl, crack 4 large eggs. Add 30 ml (2 tablespoons) whole milk, 1 tsp salt and 1/2 tsp black pepper. Whisk until yolks and whites are fully combined and slightly frothy.

    Heat pan

    Wipe the skillet/grill pan clean and return to medium-low heat. Add 1 tablespoon unsalted butter and swirl to coat the pan. Butter should melt and foam but not brown.

    Cook omelette

    Pour the beaten eggs into the pan and let sit undisturbed for 15-20 seconds until edges begin to set. Using a spatula, gently push set edges toward the center, tilting the pan to allow runny egg to flow to the edges. Repeat until the omelette is mostly set but still slightly moist on top (about 90 seconds total).

    Add fillings

    On one half of the omelette, evenly distribute the chopped grilled chicken, sautéed or raw diced bell pepper and onion, sliced scallions, and 50 g shredded cheddar. Scatter chopped parsley if using.

    Fold and finish

    Carefully fold the empty half of the omelette over the filling to make a semicircle. Let cook 30-60 seconds more so the cheese melts and fillings warm through. If the omelette is still undercooked, cover the pan briefly (30 seconds) to finish without browning.

    Serve

    Slide omelette onto a plate, season with a pinch of black pepper or extra parsley, and serve immediately.
