Harvest 2 kg of ripe Pinot Grigio grapes. Remove any stems and leaves, and rinse the grapes under cool water to eliminate impurities.

Harvest and Prepare Grapes

Using a grape crusher or your hands, gently crush the grapes in a sanitized fermentation vessel to release the juice.

Crush Grapes

Add 500 ml of water to the crushed grapes and sprinkle 1 g of sulfur dioxide over the mixture to prevent unwanted bacteria growth.

Add Water and Sulfur Dioxide

Dissolve 5 g of yeast in a small amount of water and add to the grape mixture. Stir gently and cover with a clean cloth. Allow the mixture to ferment in a cool, dark place for about 1-2 weeks, stirring daily.

Fermentation Process

After fermentation, strain the liquid from the solids into another sanitized vessel. Add 1 tsp of pear essence, 1 tsp of citrus zest, and 0.5 tsp of almond extract to enhance the aroma profile of the wine.

Enhance Aromas

Let the wine sit for a few days to allow sediment to settle, then siphon the clear wine into clean bottles, leaving sediment behind.

Final Racking

Using sanitized bottles, fill them with the wine, leaving about 1 inch of space at the top. Seal with corks to prevent oxidation.

Bottle the Wine

Allow the bottled wine to age for at least 3 months in a cool, dark place to develop its flavors before enjoying.
