Method
Pita Bread
Preheat the oven to 400°F (200°C). Arrange pita rounds on a baking sheet in a single layer.
Warm in the oven for 6–8 minutes until puffed and slightly crisp at the edges. Remove and keep covered with a clean towel to stay soft until serving.
Classic Hummus
Prep
Rinse and drain the canned chickpeas. Reserve 2–3 tablespoons of the liquid from the can for adjusting texture later.
In a food processor, combine 1 cup chickpeas, 0.25 cup tahini, 3 tbs lemon juice, 1 clove garlic, 0.5 tsp ground cumin, 2 tbs olive oil and 0.75 tsp salt.
Process until smooth, pausing to scrape down sides. If the mixture is too thick, add 1–2 tbs of reserved chickpea liquid or water to reach a creamy consistency.
Taste and adjust seasoning (more lemon, salt, or cumin as desired). Transfer to a serving bowl and garnish with 0.25 tsp smoked paprika and 2 tsp toasted pine nuts or chopped parsley. Drizzle 1 tbs olive oil over the top if desired.
Tzatziki (Creamy Cucumber-Yogurt Dip)
Prepare cucumber
Peel, seed, and grate the cucumber. Place grated cucumber in a fine sieve or clean kitchen towel, sprinkle with a pinch of salt, and press/ squeeze to remove excess moisture — you want about 1/2 cup packed grated cucumber.
In a bowl, combine 1 cup Greek yogurt, the drained grated cucumber, 1 tbs lemon juice, 0.5 minced garlic clove, 1 tbs chopped fresh dill, 1 tsp olive oil, 0.5 tsp salt, and 0.25 tsp black pepper.
Stir until smooth, taste and adjust seasoning. Chill for at least 15 minutes to allow flavors to meld (or serve immediately if pressed for time).
Marinated Olives & Tomatoes
In a small bowl, combine 1 cup mixed pitted olives and 0.75 cup halved cherry tomatoes.
Add 2 tbs olive oil, 1 tsp fresh oregano (or 1/2 tsp dried), 0.5 tsp lemon zest, 0.25 tsp red pepper flakes (optional), and 0.25 tsp salt. Toss to coat evenly.
Let marinate at room temperature for 10–15 minutes (or up to 2 hours refrigerated) so flavors meld. Bring to room temperature before serving.
Assembly & Serving
Arrange the three chosen appetizers (Classic Hummus, Tzatziki, and Marinated Olives & Tomatoes) in separate small bowls on a large serving platter.
Serve immediately so pita is warm and dips are fresh. Leftover dips can be refrigerated in airtight containers for up to 3 days (tzatziki may thin slightly).
