Prepare vegetables

Wash the tomato and lettuce. Slice the tomato into 1/4-inch rounds (about 4 slices). Thinly slice the red onion into rings and separate. Shred or chop the iceberg lettuce into bite-size pieces and pat dry. Keep everything chilled until assembly.

Form patties

Place the ground beef in a bowl. Add 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder and 1/2 tsp onion powder. Gently mix with your hands until just combined; avoid overworking. Divide the meat into 4 equal portions and form into patties about 3.5 inches in diameter and 1/2-inch thick (they will shrink slightly while cooking). Press a slight dimple in the center of each patty to help them cook evenly.

Cook patties

Heat a large skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil. When oil shimmers, add the patties (do not crowd; cook in batches if needed). Cook about 3-4 minutes per side for medium, flipping once. If using cheese, place a slice on each patty during the final minute and cover the pan briefly to melt. Remove patties to a plate and let rest 2 minutes.

Warm pita

While patties rest, warm the pita pockets. Place pita directly on a gas burner over low flame for 10–15 seconds per side, or wrap in foil and heat in a 350°F (175°C) oven for 5 minutes, or microwave 10–15 seconds. Open each pocket carefully so one side remains attached to create a half-pocket.

Assemble

Spread 1 tablespoon mayonnaise inside each pita half, then 1 teaspoon mustard and 1 tablespoon ketchup (adjust to taste). Insert one beef patty into each pita. Top each patty with shredded lettuce (about 1/4 cup), 1-2 tomato slices, and some red onion rings to taste. Serve immediately alongside fries.

Prep potatoes

Wash and peel the potatoes if desired. Cut each potato into even sticks about 1/3 inch thick. Place cut fries in a large bowl of cold water and soak 20 minutes to remove excess starch; this helps them crisp.

Dry and season

Drain the potatoes and pat completely dry with clean kitchen towels or paper towels. Toss the dry fries with 1/2 teaspoon salt and 1/2 teaspoon paprika to distribute seasonings.

Cook fries (oven method)

Preheat oven to 425°F (220°C). On a large rimmed baking sheet, spread the fries in a single layer and drizzle with 1–2 tablespoons vegetable oil (from the 2 cups quantity; use remaining oil for future use). Toss to coat evenly. Bake 25–30 minutes, turning once halfway, until golden and crisp. Adjust salt to taste after baking.

OR Cook fries (pan-fry method)

Heat 1/2 inch of vegetable oil in a heavy skillet over medium-high heat until shimmering (about 350°F if using a thermometer). Fry potatoes in batches until golden brown and crisp, about 4–5 minutes per batch. Transfer to a paper-towel-lined tray and season immediately with remaining salt and paprika.
