Coffee Base

Method

Coffee Base

  1. 1

    Brew coffee

Brew 2 cups of very strong coffee or pull the equivalent in espresso (about 2 double shots). Keep hot.

  2. 2

    Heat milk and chocolate

In a small saucepan over medium-low heat, combine 1 cup whole milk, 2 tablespoons cocoa powder, 1 ounce finely chopped dark chocolate, and 1 tablespoon granulated sugar. Whisk continuously until the chocolate is fully melted and the mixture is steaming but not boiling (about 3–5 minutes). This creates a chocolate-mocha milk.

  3. 3

    Combine coffee and chocolate milk

Pour the hot coffee into a heatproof pitcher or pot, then add the hot chocolate-milk mixture. Stir thoroughly to combine so the mocha notes are evenly distributed.

Sweetening & Flavor

  1. 4

To the combined coffee mixture, add 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1 teaspoon ground nutmeg, and 1 teaspoon cayenne pepper. Start with 1/4 teaspoon cayenne if you prefer milder heat; taste and adjust. Whisk well to dissolve spices and integrate flavors. Heat gently for another minute to bloom the spices, but avoid boiling.

  2. 5

Taste and adjust sweetness or heat: add up to an additional 1 tablespoon sugar if you prefer sweeter, or a pinch more cayenne for more warmth. Stir after each adjustment and re-taste.

Finishing & Garnish

  1. 6

Prepare garnish: toast 2 tablespoons sliced almonds in a small dry skillet over medium heat for 2–3 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and let cool slightly.

  2. 7

Optional whipped cream: If using, whip 1/2 cup heavy cream with a small whisk or hand mixer until soft peaks form. Spoon or pipe a dollop onto each cup.

  3. 8

Assemble and serve: Divide the Aztec D'oro mixture between two heatproof mugs (about 1.25 cups per mug). Top each with a generous spoonful of whipped cream if using. Sprinkle toasted almonds, a pinch of dark chocolate shavings, and a light dusting (about 1/8–1/4 tsp) of ground cinnamon over the top. If you like extra kick, finish with a tiny pinch of cayenne on the whipped cream.

  4. 9

Serve immediately while hot. Stir before each sip to reincorporate any settled spices and chocolate.
