Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat.

Stir constantly until the sugar is fully dissolved and the liquid is clear, about 3–5 minutes. Do not boil vigorously.

Remove from heat and let cool to room temperature. Transfer to a clean bottle and refrigerate; syrup will keep for up to 2 weeks.

Add 2 oz pear vodka, 0.75 oz freshly squeezed lemon juice, 0.5 oz simple syrup, and 0.5 oz egg white (if using) into a cocktail shaker.

Dry shake
If using egg white, dry shake (no ice) vigorously for 15–20 seconds to build a frothy texture.

Shake with ice
Add a large handful of ice to the shaker and shake hard for 10–15 seconds until the shaker is very cold.

Double-strain into a chilled coupe or Nick & Nora glass using a fine mesh strainer to remove ice shards and ensure a silky texture.

Garnish with a thin pear slice floated on the foam and a lemon twist expressed over the drink. Add 2 dashes of Angostura bitters on the foam if desired, and use a toothpick to create a small decorative pattern.
