1. Prepare glass
Fill a highball glass (10–12 oz) with large ice cubes or crushed ice to chill the glass and keep the drink cold without diluting too quickly.
2. Add rum
Pour 2 oz Gosling's Black Seal Dark Rum over the ice, letting it settle at the bottom of the glass.
3. Add lime
Squeeze 1/2 oz fresh lime juice (about 1/2 a small lime) into the glass. Optionally drop the squeezed wedge into the drink for extra aroma.
4. Top with ginger beer
Slowly pour 4 oz ginger beer over the back of a bar spoon or directly down the side of the glass so it layers slightly over the rum and creates the characteristic dark-on-top appearance. Pour gently to preserve carbonation.
5. Garnish and finish
Gently stir once if you prefer a lightly integrated drink (traditional Dark 'n' Stormy often leaves a visible layer). Garnish with a lime wedge or wheel on the rim and skewer 1–2 pieces of candied ginger on a cocktail pick and rest it across the glass.
6. Serve
Present immediately with a straw if desired. Encourage the guest to squeeze the lime again to taste and nibble the candied ginger between sips.
