Prepare the Ingredients

Chop the pancetta into small pieces, dice the onion, and roughly chop the fresh tomatoes.

Cook the Pancetta

In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until it becomes crispy, about 5-7 minutes.

Sauté the Onions

Add the diced onion to the skillet with the pancetta and cook until the onion is translucent, about 3-4 minutes.

Add Tomatoes and Spices

Stir in the chopped tomatoes and crushed red pepper flakes. Season with salt and black pepper to taste. Let the sauce simmer for about 15 minutes, stirring occasionally.

Cook the Spaghetti

While the sauce simmers, cook the spaghetti according to package instructions in a large pot of salted boiling water. Drain when al dente.

Add the cooked spaghetti to the skillet with the sauce and toss to combine. Serve hot, topped with grated Pecorino Romano cheese.
