Pollo alla Parmigiana

Method

Cooking Instructions

1

Prepare the Chicken

Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Dredge each chicken breast in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with bread crumbs.

2

Fry the Chicken

In a large skillet, heat the olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.

3

Assemble the Dish

In a baking dish, spread a layer of marinara sauce. Place the fried chicken breasts on top of the sauce. Pour more marinara sauce over the chicken and then sprinkle mozzarella and parmesan cheese on top.

4

Bake

Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.

5

Garnish

Remove from the oven and garnish with fresh basil leaves before serving.
