Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, sautéing until fragrant, about 1-2 minutes.

Add Tomatoes

Stir in the canned diced tomatoes, and season with salt and black pepper to taste. Bring the mixture to a simmer.

Cook the Mussels

Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

Finish with Feta

Stir in the crumbled feta cheese and chopped parsley, allowing the cheese to soften in the hot broth.

Ladle the mussels and broth into bowls and serve immediately with crusty bread for dipping.
