Preheat and prepare
Preheat your waffle iron to medium-high heat according to manufacturer instructions. If desired, heat oven to 200°F (95°C) and place a wire rack on a baking sheet to keep cooked waffles warm and crisp.
Dry ingredients
In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tbsp granulated sugar, 1 tbsp baking powder, and 1/2 tsp fine salt until evenly combined. If you want extra crispness, whisk in 1/4 cup cornstarch with the dry ingredients.
Wet ingredients
In a separate bowl or large measuring cup, beat 2 large eggs lightly. Add 1 3/4 cups whole milk, 1/2 cup melted unsalted butter (cooled slightly), and 1 tsp vanilla extract. Whisk until homogenous.
Combine batter
Make a well in the center of the dry ingredients and pour the wet mixture in. Gently stir with a spatula until just combined; a few small lumps are fine. Do not over-mix to keep waffles tender. Let batter rest 5 minutes to allow baking powder to activate and cornstarch (if used) to hydrate.
Optional separation (extra light waffles)
For lighter waffles, separate the eggs. Whisk yolks with the wet ingredients as above. Whip the egg whites to soft peaks and fold them gently into the combined batter in the final step.
Cooking & Finishing
Brush or spray the waffle iron lightly with neutral oil or melted butter. Pour an appropriate amount of batter into the center (typically 1/2 to 3/4 cup depending on your iron size) without overfilling. Close the lid and cook until the waffle is golden brown and crisp (about 3–5 minutes). Indicators: steam will decrease and waffle will lift easily from the plates.
Transfer cooked waffles to the wire rack set in a warm oven (200°F / 95°C) to keep crisp while you finish remaining waffles. If stacking waffles, separate layers with parchment to avoid sogginess.
