Prepare dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt until evenly combined and aerated.

Combine wet ingredients

In a separate bowl or large measuring cup, whisk the eggs lightly. Add the buttermilk, melted butter (cooled slightly), and vanilla extract; whisk until smooth.

Make batter

Create a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined — some small lumps are fine. Do not overmix. If batter seems very thick, add 1-2 tablespoons of milk or water to reach a pourable but thick consistency.

Rest

Let the batter rest for 10 minutes at room temperature. This hydrates the flour and helps produce tender pancakes.

Preheat griddle

Place a nonstick griddle or large skillet over medium heat and let it preheat for 4–6 minutes. Lightly brush or spray the surface with 1–2 teaspoons of neutral oil or melted butter. The surface is ready when a few drops of water sizzle and evaporate within a couple of seconds.

Cook pancakes

For each pancake, pour about 1/4 cup (60 ml) of batter onto the hot griddle, leaving space between pancakes. If making chocolate chip pancakes, sprinkle a tablespoon of chocolate chips onto the batter immediately. Cook until bubbles form across the surface and the edges look set, about 2–3 minutes. Flip carefully and cook the other side until golden brown, about 1–2 minutes more. Adjust heat as needed to avoid burning.

Keep warm

Transfer cooked pancakes to a baking sheet in a single layer and keep warm in a 200°F (95°C) oven while you cook remaining batter. Re-brush the griddle with oil or butter if it becomes dry.

Prepare toppings

While pancakes cook, arrange the fresh berries, sliced bananas, and butter on a serving board. Warm maple syrup gently if desired. Dust with powdered sugar just before serving if using.

Stack pancakes and top as desired with a pat of butter, a drizzle of maple syrup, fresh berries, sliced bananas, and a sprinkle of powdered sugar. Offer extra chocolate chips and syrup on the side for a pancake-station style self-serve.
