Sift and combine dry ingredients

Add the all-purpose flour, granulated sugar, and fine sea salt to a large mixing bowl. Whisk briefly to combine and aerate the flour.

Make a well and add eggs

Create a well in the center of the dry ingredients and crack in the eggs. Begin whisking the eggs with a small amount of flour from the edges to form a thick paste.

Stream in liquids

Gradually pour in the milk and water in a steady stream while whisking continuously to avoid lumps. Whisk until a smooth batter forms. The batter should be very thin—about the consistency of heavy cream. If lumps remain, strain the batter through a fine-mesh sieve into a clean bowl.

Add butter and flavor

Whisk in the melted unsalted butter and vanilla extract until fully incorporated. Let the batter rest at room temperature for 20–30 minutes (or refrigerate up to 24 hours) to allow the flour to hydrate and air bubbles to relax; this yields more tender crêpes.

Adjust consistency

After resting, stir the batter gently. If too thick, thin with 1–2 tablespoons of water or milk at a time until it easily coats the back of a spoon and runs smoothly from a ladle.

Preheat pan

Place an 8–10 inch nonstick skillet or crêpe pan over medium heat. Allow it to heat for 3–4 minutes so it is evenly hot. Test by flicking a few drops of water—if they sizzle and evaporate quickly, the pan is ready.

Butter the pan

Brush or rub a small amount of the unsalted butter across the surface (about 1/2 tsp per crêpe). Wipe excess with a paper towel leaving a thin coating so the crêpe doesn't fry.

Cook each crêpe

Pour about 1/4 cup (60 ml) of batter into the center of the hot pan. Immediately tilt and rotate the pan in a circular motion to spread the batter into an even thin layer covering the bottom. Cook until the edges lift and the underside is lightly golden, 45–60 seconds. Use a thin spatula to lift and flip the crêpe, then cook the second side for 15–30 seconds until just set. Transfer the cooked crêpe to a warm plate and keep loosely covered while you make the rest. Yield: about 8–10 crêpes depending on pan size and thickness.

Keep crêpes warm

Stack finished crêpes on a plate and cover with foil or a clean kitchen towel, or keep on a warming tray set to low to maintain temperature without drying.

Assemble to order — sweet classic (Nutella & banana)

Spread 1/2 to 1 tablespoon of Nutella over the center of a warm crêpe, place 2–3 slices of banana on top, fold the crêpe into a tri-fold or roll, dust with powdered sugar, and serve immediately with a dollop of whipped cream if desired.

Assemble to order — lemon & sugar (simple)

While still warm, sprinkle 1 teaspoon of granulated sugar evenly over the crêpe, squeeze a lemon wedge lightly over the surface, fold or roll, and serve immediately. Optionally dust with powdered sugar.

Assemble to order — berries & ricotta

Spread 2 tablespoons of sweetened ricotta or lemon curd across the crêpe, top with 1/4 cup sliced strawberries (or mixed berries), fold, and finish with a drizzle of maple syrup or a dusting of powdered sugar.

Offer additional toppings at the table (whipped cream, extra maple syrup, more fruit, extra Nutella, lemon curd). Serve crêpes immediately for best texture—thin, tender, and slightly crisp at the edges.
