Method
Burger Patties & Seasoning
Form the patty
Lightly mix the 0.5 lb ground beef with 1 tsp Cajun seasoning, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Do not overwork the meat. Form into a loose, flat patty about 3/4"–1" thick with a slight dimple in the center.
Cook the patty
Heat a cast-iron skillet or griddle over medium-high heat until very hot (about 3–4 minutes). If using a pan, add 1 tsp neutral oil and swirl. Place the patty in the skillet and cook undisturbed for 3–4 minutes until a deep brown crust forms. Flip and cook 3–4 more minutes for medium (adjust time for preferred doneness).
Peppers & Onions
Sauté
In a separate skillet over medium heat, add 1 tbsp unsalted butter and 1 tsp neutral oil. When butter is melted and shimmering, add the sliced onion and green bell pepper. Sauté for 4–6 minutes until softened and starting to brown. Add the sliced jalapeño and continue to cook 1–2 minutes. Season with 1/4 tsp salt and 1/8 tsp black pepper. Remove from heat and keep warm.
Optional: char for extra flavor
For a smokier note, you can char the peppers and onions over a hot flame or under a broiler for 1–2 minutes after sautéing.
Sauce & Assembly
Make the chipotle sauce
In a small bowl, combine 2 tbsp mayonnaise, 1 tsp chipotle Tabasco (adjust to taste), and 1/2 tsp lime juice if using. Stir until smooth.
Toast the bun
Butter the cut sides of the burger bun with 1/2 tbsp unsalted butter. Toast face down in a hot skillet for 1–2 minutes until golden.
Assemble the INFERNO burger
Spread half of the chipotle mayo on the bottom bun. Place the cheese-topped burger patty on the bun. Pile the sautéed green peppers, onions, and jalapeño on top of the patty. Drizzle or spread remaining chipotle mayo on the top bun and place it over the peppers. Add optional pickles if desired.
Serve
Serve immediately while hot with fries or a side of your choice. Provide extra hot sauce at the table for those who want more heat.
