Bring pasta water to a boil

Fill a large pot with 4-5 quarts (about 4-5 liters) of water and bring to a rolling boil. Add 1 tablespoon kosher salt once boiling.

Cook linguine

Add 12 oz linguine to the boiling water and cook until al dente according to package instructions (usually 8-10 minutes). Reserve 1 cup of pasta cooking water, then drain pasta and set aside.

Prepare chicken

While pasta cooks, pat 2 chicken breasts dry. Season both sides with 1 tsp kosher salt and 1 tsp black pepper. Heat 1 tbsp olive oil in a skillet or on a grill over medium-high heat.

Cook chicken

Grill or sear chicken 5-7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C). Transfer to a cutting board and rest 5 minutes, then slice into 1/4" strips.

Alfredo Sauce

Make roux and sauté garlic

In a large skillet or saucepan over medium heat, melt 4 tbsp unsalted butter. Add 3 minced garlic cloves and sauté 30-45 seconds until fragrant but not browned. Sprinkle 1 tbsp all-purpose flour over the butter and garlic and stir for 30-60 seconds to cook the flour.

Add liquids

Gradually whisk in 1 cup whole milk and 1 cup heavy cream until smooth. Increase heat to medium-low and bring mixture to a gentle simmer, whisking frequently to avoid lumps. Simmer 3-4 minutes until slightly thickened.

Finish sauce with cheese and seasoning

Reduce heat to low. Stir in 1 cup freshly grated Parmesan cheese until melted and incorporated. Season with 1 tsp salt, 1/2 tsp black pepper and a pinch of nutmeg (optional). If sauce is too thick, loosen with 2-4 tbsp reserved pasta water until desired consistency is reached.

Combine & Serve

Toss pasta with sauce

Add drained linguine to the skillet with Alfredo sauce. Toss or gently fold to coat the pasta evenly. If needed, add additional reserved pasta water (1-2 tbsp at a time) to achieve a silky sauce that clings to the pasta.

Plate and top with chicken

Divide sauced linguine between plates or a serving bowl. Arrange sliced grilled chicken on top of the pasta. Sprinkle 1/4 cup extra grated Parmesan and 2 tbsp chopped fresh parsley over each serving.

Serve with bread

Warm 1 loaf of fresh bread (whole or sliced) and serve alongside the Chicken Alfredo to mop up extra sauce.
