Method
Wings
Prepare wings
Pat the wings (or boneless pieces) dry with paper towel. If using whole wings, separate into flats and drumettes and discard tips or save for stock.
Season and coat
In a large bowl, toss the wings with salt, black pepper and baking powder until evenly coated. The baking powder helps crisp the skin in the oven. Add the 2 tablespoons vegetable oil and toss again.
Cook wings
Oven method (recommended): Preheat oven to 425°F (220°C). Arrange wings in a single layer on a wire rack set over a rimmed baking sheet. Bake 25-30 minutes, flip, then bake another 10-15 minutes until golden brown and internal temperature is 165°F and skin is crispy. For boneless pieces, check at 12-18 minutes total depending on size. Alternative fryer method: Heat oil to 350°F (175°C). Fry wings in batches 8-12 minutes until crisp and cooked through. Drain on paper towels.
Buffalo Sauce
In a small saucepan over low heat, melt 3 tablespoons butter. Add 1/2 cup hot sauce, 1 teaspoon honey and 1/2 teaspoon Worcestershire sauce. Whisk until combined and warmed through (about 2 minutes). Keep warm until ready to toss.
Toss finished hot wings in the sauce in a large bowl until evenly coated. Serve immediately.
Honey Sriracha Sauce
Combine 1/4 cup sriracha, 2 tablespoons honey, 1 teaspoon rice vinegar and 1/2 teaspoon soy sauce in a small bowl or saucepan. Warm gently for 1-2 minutes, whisking until shiny and slightly thickened.
Toss wings in the sauce to coat and serve.
Caribbean Jerk Sauce
Whisk together 2 tablespoons jerk seasoning, 1 tablespoon lime juice, 1 teaspoon brown sugar and 1 teaspoon olive oil. Taste and adjust heat/sweetness. If using a spicy paste, you can thin with 1 tablespoon water.
Toss wings with the jerk mixture until evenly coated. Garnish with extra lime wedges if desired.
Garlic Parmesan Sauce
Melt 2 tablespoons butter in a small skillet over medium-low heat. Add 2 minced garlic cloves and cook 30-45 seconds until fragrant but not browned. Remove from heat and stir in 3 tablespoons grated Parmesan, 1 teaspoon chopped parsley and 1/2 teaspoon lemon juice until slightly saucy.
Toss wings with the garlic-parmesan mixture gently so the cheese adheres. Serve immediately and sprinkle additional Parmesan if desired.
Honey BBQ Sauce
Warm 1/2 cup BBQ sauce with 1 tablespoon honey and 1/2 teaspoon apple cider vinegar in a small saucepan over low heat until combined and glossy, about 1-2 minutes.
Toss wings in the sauce to coat and serve.
