Prepare glass

Choose a tall highball or Collins glass (10–14 oz). Fill the glass with cubed ice to chill while you mix the drink.

Combine spirits and citrus

In a cocktail shaker (or mixing glass) add 2 oz London dry gin, 0.75 oz freshly squeezed lemon juice, 0.75 oz freshly squeezed grapefruit juice, and 0.5 oz simple syrup. Add a handful of ice to the shaker.

Shake

Secure the shaker and shake vigorously for about 8–10 seconds until the exterior is frosty and the ingredients are well chilled and slightly diluted.

Strain into glass

Dump the ice from the chilled highball glass. Fill the glass about three-quarters full with fresh cubed ice (or place one large ice cube). Double-strain the shaken mixture into the glass over the fresh ice to remove any small ice shards and citrus pulp.

Top with soda

Gently pour 4 oz cold soda water down the side of the glass to retain carbonation and create a layered, effervescent finish. Give the drink one gentle stir (1–2 turns) to combine.

Garnish and serve

Express the oils of a lemon twist over the surface by holding the twist over the drink and pinching it so the oils spray out, then drop the twist into the glass. Float a grapefruit wheel on the surface or pop it on the rim. Serve with a straw if desired.

Notes

Adjust sweetness by increasing or decreasing simple syrup by 0.25 oz. For a more bitter, aromatic version, swap grapefruit juice for a mix of grapefruit and a dash (0.25 oz) of Aperol or Campari; reduce soda slightly if adding an aperitif.
