Prepare glass

Select a highball or Collins glass (10–12 oz). Fill the glass about three-quarters full with cubed ice to chill it while you assemble ingredients.

Build the cocktail

In the chilled glass (or a mixing glass if you prefer stirring), add 2 oz gin, 4 oz chilled sugar-free pineapple juice, 0.5 oz fresh lime juice, and 0.5 tablespoon sugar-free pineapple syrup/cordial. If using bitters, add 1 dash now.

Mix

Stir the ingredients gently for 10–15 seconds to combine and slightly chill. If you used a mixing glass, strain into the prepared highball glass over fresh ice.

Top with bubbles

Top the drink with 2 oz chilled club soda or sparkling water. Give the drink one gentle stir (2–3 turns) to integrate the soda without flattening it.

Garnish and finish

Garnish with a pineapple wedge or wheel on the rim and a mint sprig tucked beside it if using. Optionally express a mint sprig or rub the pineapple rind around the glass lip to enhance aroma.

Serve immediately with a straw or stirrer. Adjust sweetness or acidity to taste by adding small amounts (1/4 tbs) of sugar-free syrup or 1/4 oz lime juice as needed.
