Prepare and preheat

Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan or line it with parchment paper. Bring eggs to room temperature if possible (about 20 minutes out of the fridge).

Whisk dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined.

Beat eggs and sugar: In a large bowl, whisk or use an electric mixer to beat the eggs and granulated sugar until pale, thickened and slightly ribboning (about 3–4 minutes on medium-high).

Add flavorings: Mix in the lemon zest, lemon juice, vanilla extract, and limoncello until incorporated.

Alternate in wet and dry: With the mixer on low, add the flour mixture in two additions, alternating with the milk (start and end with flour). Scrape the bowl after additions to ensure even mixing. Do not overmix — blend until just combined.

Fold in butter: Gently fold in the melted butter until incorporated. The batter will be fairly loose; this is normal and yields a tender crumb.

Bake: Pour batter into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean and the cake springs back lightly when touched.

Cool: Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely (about 1 hour total). While still warm, you may brush the top with 1–2 tbsp of the limoncello syrup (prepare next) to keep it moist.

Limoncello Syrup

Make syrup: In a small saucepan, combine water and granulated sugar. Bring to a low simmer over medium heat, stirring until the sugar dissolves. Remove from heat and stir in lemon juice and limoncello. Cool to room temperature.

Brush cake (optional): Once the sponge is still slightly warm or at room temperature, brush the top lightly with 2–3 tablespoons of the syrup to infuse limoncello flavor and keep the crumb moist.

Lemon Mascarpone Cream

Prepare mascarpone: In a chilled bowl, combine mascarpone, powdered sugar, lemon zest, lemon juice, limoncello, and vanilla. Whisk by hand until smooth and mostly lump-free. Take care not to overwork mascarpone or it can become grainy.

Whip cream: In a separate chilled bowl, whip the cold heavy cream to soft-medium peaks (the cream should hold shape but still be smooth).

Fold together: Gently fold one-third of the whipped cream into the mascarpone mixture to lighten it, then fold in the remaining cream until homogeneous and fluffy. Taste and adjust sweetness or lemon if desired.

Chill: Refrigerate the assembled cream while you make the raspberry sauce, at least 15 minutes to firm slightly.

Raspberry Sauce & Garnish

Cook raspberries: In a small saucepan, combine raspberries, granulated sugar, and lemon juice. Cook over medium heat, stirring and gently mashing the berries with a spoon, until the mixture becomes saucy (4–6 minutes). If the mixture is too thick, add the tablespoon of water.

Optional thickening: If you prefer a thicker sauce, mix the cornstarch with an equal small amount of cold water to make a slurry and whisk it into the simmering raspberries. Cook for an additional 30–60 seconds until thickened. Remove from heat.

Strain (optional): For a smooth sauce, press the cooked raspberries through a fine-mesh sieve into a bowl, discarding seeds. For a rustic sauce, leave as-is. Cool to room temperature before using.

Reserve some berries: Set aside about 1/2 cup fresh raspberries and a few tablespoons of sauce for drizzling and garnish.

Assembly

Level cake: If the sponge has domed, level the top with a serrated knife to create a flat surface for filling.

Split cake: Using a long serrated knife, carefully slice the cooled cake horizontally into two even layers. Place the bottom layer on your serving plate or cake stand.

Brush with syrup: Lightly brush the cut surfaces of both layers with remaining limoncello syrup to add moisture and flavor.

Fill: Spread about two-thirds of the lemon mascarpone cream evenly over the bottom cake layer, leaving a small border to prevent overflow. Spoon a few tablespoons of raspberry sauce in the center (not all the way to the edges) and gently swirl with a spatula for a marbled effect if desired.

Top layer and chill: Place the top cake layer gently over the filling. Press lightly to adhere. Use the remaining mascarpone cream to frost the top (optional) or simply leave the top lightly frosted. Refrigerate the assembled cake for at least 1 hour to set the filling.

Finish and serve: Just before serving, drizzle the reserved raspberry sauce over the top of the cake, letting some run down the sides. Garnish with the reserved fresh raspberries and mint leaves. Slice with a hot, dry knife for clean cuts.
