Chill flute

Place a Champagne flute in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to ensure it is well chilled. Empty the flute before pouring the finished drink.

Combine base ingredients

In a cocktail shaker, add 1.5 oz Bombay gin, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup. Fill the shaker with ice (about 1 cup) so the liquid is well surrounded by ice.

Shake

Secure the shaker and shake vigorously for about 10-15 seconds until the outside of the shaker is cold and the ingredients are well combined and slightly diluted.

Strain

Double-strain the shaken mixture into the chilled Champagne flute using a Hawthorne or fine mesh strainer to remove ice shards and any pulp from the lemon.

Top with Champagne

Slowly top the flute with about 2.5 oz Brut Champagne. Pour gently down the side of the glass to preserve effervescence and avoid overflowing.

Garnish and serve

Express a lemon twist over the top of the glass to release oils, then drop the twist into the drink or hang it on the rim. Serve immediately while sparkling and cold.
