Prepare the lime
Wash the lime. Cut off the ends, then cut the lime into 8 wedges (cut in half lengthwise, then each half into two or more pieces so you have 8 segments). Remove any large seeds if present.
Muddle
Place the lime wedges in an old-fashioned (rocks) glass. Add 0.5 oz simple syrup on top of the lime. Using a sturdy muddler, press and twist firmly 8–12 times to crush the lime, releasing juice and some essential oils from the peel, but avoid pulverizing the peel into tiny bits. The goal is to extract juice and flavor without creating too much bitterness.
Add cachaça
Pour 2 oz cachaça into the glass over the muddled lime and syrup. Give the mixture a brief stir (4–6 seconds) to combine flavors.
Garnish and serve
Top with a lime wedge or wheel on the rim. Serve immediately with a short straw or stirrer so the drink can be re-mixed while sipping.
