Method
Poached Oysters (briny cup)
Prepare poaching liquid
In a wide saucepan combine 1 liter water, 120 ml dry white wine, 2 bay leaves, 8 peppercorns and 1/2 lemon (cut and squeezed). Bring to a gentle simmer over medium heat (do not boil hard). Season with about 1 tsp sea salt.
Shuck and poach
Carefully shuck 12 oysters, reserving their liquor in a bowl. Strain the poaching liquid through a fine sieve to remove solids. Return liquid to pan and reduce heat to a bare simmer. Gently slip oysters (in deep half shells) into the simmering liquid just to warm through — about 30–45 seconds — until the edges curl slightly. Remove with a slotted spoon and place each oyster in its half shell on a tray. Spoon 1/4 tsp of the reserved oyster liquor over each oyster. Finish each with a small pat (about 2–3 g) of unsalted butter so it melts over the oyster.
Baked Oysters with Spinach & Parmesan
Sauté spinach base
Preheat oven to 200°C (400°F) with rack in upper third. In a skillet over medium heat melt 30 g unsalted butter. Add minced shallot and sauté 2–3 minutes until translucent. Add 1 minced garlic clove and cook 30 seconds. Add 200 g baby spinach in batches, stirring until just wilted. Cook until most moisture has evaporated, about 3–4 minutes total.
Finish filling
Reduce heat to low. Stir in 60 ml heavy cream, 60 g grated Parmesan, 0.25 tsp grated nutmeg, 0.5 tsp lemon zest, 0.5 tsp sea salt and 0.25 tsp black pepper. Cook 1–2 minutes until thickened to a loose creamy consistency. Taste and adjust seasoning. Remove from heat and let cool slightly.
Assemble and bake
Shuck 12 oysters into deep half shells and place them on a baking tray lined with coarse salt or crumpled foil to stabilize. Spoon about 1 tablespoon (roughly 15–20 g) of the spinach-Parmesan mixture atop each oyster so the oyster is partially covered but not buried. Sprinkle a light dusting (about 1/2 tsp) of additional grated Parmesan over each. Drizzle each oyster with a few drops of olive oil. Bake in the preheated oven 8–10 minutes until cheese is bubbling and edges are golden. Remove and let rest 1–2 minutes.
Thyme Crumb (crispy topping)
Make thyme crumb
While oven is heating, melt 25 g unsalted butter in a skillet over medium heat. Add 60 g fresh breadcrumbs and toast, stirring, 3–4 minutes until golden. Stir in 2 tsp chopped fresh thyme, 25 g grated Parmesan, 0.5 tsp lemon zest, 0.25 tsp sea salt and 0.25 tsp black pepper. Toast another 30–60 seconds. Transfer crumb to a bowl to cool and remain crisp.
Top oysters
For the oysters that will have thyme crumb (use desired number from the 12), spoon the crumb over the baked spinach-Parmesan oysters immediately after they come out of the oven so crumbs adhere. For a crispier finish, return topped oysters to the oven for 1–2 minutes under the broiler, watching closely to avoid burning.
Finish & Serve
Plate one oyster prepared poached with butter, one baked with spinach & Parmesan, and one topped with thyme crumb per guest to create the trio presentation (repeat for up to 4 servings). Garnish with microgreens or chopped parsley and lemon wedges. Serve immediately while warm. Provide extra lemon wedges alongside.
