Make kiwi purée

Peel 1 medium ripe kiwi and place in a blender. Blend until smooth. Strain through a fine mesh sieve into a small bowl, pressing with the back of a spoon to yield about 1 ounce (30 ml) of purée. Discard seeds/solids left in the sieve.

Juice a lemon to obtain at least 0.5 oz (15 ml) fresh lemon juice and have a lemon twist ready for garnish. Slice one thin kiwi wheel for garnish.

Build the Cocktail

Add ice to a cocktail shaker (enough to chill, about 6–8 large cubes).

Pour 3 oz yuzu sake into the shaker.

Add 1 oz fresh kiwi purée, 0.5 oz fresh lemon juice, and 0.5 oz simple syrup to the shaker.

Shake vigorously for 8–10 seconds until the outside of the shaker is cold and the mixture is well combined.

Double-strain the mixture through a fine mesh strainer into a chilled Collins or large wine glass filled with fresh ice (to remove kiwi pulp and small ice chips).

Top & Garnish

Gently pour 2 oz chilled sparkling wine down the side of the glass so it layers and preserves effervescence.

Add 1 oz club soda to lengthen and give a crisp finish. Gently stir once with a bar spoon to combine (1–2 turns).

Garnish with a kiwi wheel on the rim and a lemon twist over the top; express the lemon twist over the drink to release oils, then drop or hook on the glass.

Serve immediately with a straw or stirrer. Enjoy the bright, zesty spritz.
