Pumpkin Velouté Base
Prepare aromatics
In a medium saucepan over medium heat, melt 1 tablespoon of the butter. Add the minced shallot and cook, stirring, until translucent and soft, about 3–4 minutes. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to brown.
Incorporate stock
Gradually whisk in the chicken or vegetable stock in two or three additions to avoid lumps. Bring to a gentle simmer, whisking until the mixture thickens slightly, about 3–5 minutes.
Add pumpkin and aromatics
Stir in the pumpkin puree, bay leaf, and thyme. Reduce heat to low and simmer gently for 10 minutes, stirring occasionally to prevent sticking.
Season and enrich
Remove the bay leaf and thyme sprigs (if you used whole sprigs). Stir in the milk and heavy cream, then add the ground nutmeg, ground cinnamon, salt, and black pepper. Warm through on low (do not boil) for 4–5 minutes to meld flavors.
Finishing & Garnish
Prepare pumpkin seeds
If your pepitas are not toasted, heat a small dry skillet over medium heat. Add the pumpkin seeds and toast, stirring, until they are fragrant and lightly browned, 3–5 minutes. Remove from heat and set aside to cool.
Serve
Serve immediately while hot. Offer extra black pepper and a small pot of crème fraîche at the table.
