Build and shake

Combine base

Add gin, fresh lemon juice, and simple syrup to a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 3–4 cubes) and shake vigorously for 10–12 seconds until well chilled and slightly frosty on the outside of the shaker.

Double-strain

Strain the shaken mixture through a fine mesh strainer (or use the shaker's built-in strainer) into a chilled Champagne flute to remove any small ice chips and citrus pulp.

Top and garnish

Top the chilled shaken mixture with about 3 oz of Precious Day Crémant (or another dry sparkling wine). Pour gently down the side of the flute to preserve bubbles.

Express the lemon oils over the drink by holding a lemon twist over the flute and giving it a quick twist skin-side down, then drop the twist into the glass or hang it on the rim as garnish.

Serve immediately while sparkling and chilled.
