Chill glass

Place a coupe or chilled cocktail glass in the freezer for 5–10 minutes or fill it with ice and water while you prepare the drink to ensure the cocktail stays cold and crisp.

Measure and add ingredients

Add 2 oz Bacardi Carta Blanca (white rum), 1 oz freshly squeezed lime juice (from about 1 medium lime), and 0.75 oz simple syrup (1:1 sugar to water) into a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 4 oz or enough to nearly fill the shaker). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosted. This both chills and dilutes the cocktail to the proper balance.

Prepare glass

If you chilled the glass with ice and water, dump out the ice and water now. If you used the freezer method, remove the glass from the freezer.

Double strain and serve

Double strain the shaken cocktail through a Hawthorne strainer and a fine mesh strainer into the chilled coupe or cocktail glass. Double straining removes small ice shards and pulp for a smooth texture.

Garnish and finish

Express a lime peel over the surface if desired, then garnish with a lime wheel or twist on the rim. Serve immediately.
