Choose egg style
Decide whether to make a whole-egg omelette or an egg-white omelette. For whole-egg omelette: use 3 large whole eggs. For egg-white omelette: use 3 large egg whites (discard or save yolks for another use).

Crack the chosen eggs into a medium mixing bowl. Add 2 tablespoons of milk or water (this loosens the curds), 1 teaspoon salt, and 1/4 teaspoon black pepper.

Whisk vigorously for 20–30 seconds until the mixture is uniform, slightly frothy, and pale.
Filling (prepare filling while eggs rest)

Heat a nonstick skillet over medium heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown.

Add 1/4 cup finely diced yellow onion and 1/4 cup diced bell pepper. Sauté 2–3 minutes until softened and translucent.

Add 1/2 cup sliced mushrooms and cook 2–3 minutes until they release liquid and begin to brown.

Add 1/2 cup chopped spinach and 1/4 cup halved cherry tomatoes. Cook another 30–60 seconds until spinach wilts and tomatoes warm. Transfer the cooked filling to a small bowl and wipe the pan clean with a paper towel; reserve butter in pan if still glossy.

Taste the filling and season lightly with a pinch of salt and pepper if desired.

Evenly spread the prepared filling on one half of the omelette. Sprinkle 1/2 cup shredded cheddar and 2 tablespoons crumbled feta (if using) over the filling.

Carefully fold the empty half of the omelette over the filling using the spatula. Let cook 30–45 seconds more to melt the cheese and finish setting, but avoid overcooking; for egg-white omelette cook slightly longer if needed to ensure doneness.

Slide the omelette onto a plate, seam-side down, and let rest 30 seconds so residual heat finishes cooking.
Garnish & serve
