    Prep

    Take 2 large eggs out of the refrigerator and let sit at room temperature for 5 minutes while you gather equipment (nonstick or well-seasoned skillet, spatula, small bowl if needed). This helps even cooking.

    Choose style

    Decide the style: fried (sunny-side or over-easy), scrambled, or poached. Follow the corresponding sub-steps below.

    Fried — sunny-side or over-easy

    Heat skillet over medium-low heat. Add 1 tsp oil and 1/2 tbs butter; let butter melt and foam but not brown (about 1 minute). Crack eggs into a small bowl or gently crack directly into the pan, spacing them apart. Season with a pinch (about 1/4 tsp) kosher salt and a few grinds of black pepper. For sunny-side: cover the skillet with a lid and cook 2.5–4 minutes until whites are set but yolks still runny. For over-easy: cook uncovered 2–3 minutes until whites mostly set, carefully flip with a spatula, and cook 10–20 seconds more for runny yolk or 30–45 seconds for slightly set yolk. Remove to plate.

    Scrambled (soft)

    Crack eggs into a bowl, season with 1/8 tsp salt and a pinch of pepper, and whisk until homogenous and slightly frothy (about 20–30 seconds). Heat skillet over medium-low, add 1 tbs butter and let it foam. Pour eggs into the pan. Let sit 10–15 seconds, then using a spatula scrape the cooked edges into the center, repeating gently until curds form but still moist, 1.5–2.5 minutes total. Taste and adjust salt. Slide onto plate immediately to stop cooking.

    Poached

    Fill a wide sauté pan with 3–4 inches of water, add 1/2 tsp salt and 1 tsp white vinegar (optional helps whites coagulate). Bring to a gentle simmer (small bubbles). Crack one egg into a small cup. Create a gentle whirlpool in the water, slip egg into center, and cook 3 minutes for runny yolk or 3.5–4 minutes for medium. Use a slotted spoon to remove and drain on paper towel. Repeat with second egg. Season with a pinch of salt and pepper.

    Finishing

    Taste and sprinkle remaining salt (up to the total 1 tsp) and 1/4 tsp black pepper to preference. If using herbs, scatter 1 tbs chopped chives or parsley. Serve immediately.

Optional Accompaniments

    Toast 2 slices of bread while eggs cook. Spread 1 tsp butter on hot toast. Plate eggs on or beside toast, add a few drops of hot sauce if desired.
