Combine ingredients
In a cocktail shaker add the white rum, fresh pineapple juice, fresh lime juice, orgeat, vanilla syrup, and coconut cream. Add the dashes of pineapple bitters if using.

Shake
Fill the shaker with ice (about 4-6 large cubes or 3/4 cup) and shake vigorously for 12-15 seconds until well-chilled and slightly frothy from the coconut cream.

Strain and serve
Discard the chilling ice from the serving glass and add 3/4 to 1 cup of fresh cracked ice. Double-strain the cocktail into the prepared glass over the cracked ice to remove any large ice chips and small pulp bits.

Float dark rum (optional)
If using the dark rum float, gently pour 1/2 oz dark rum over the back of a bar spoon so it rests on top of the cocktail, creating a layered look and a richer aroma.

Garnish
Garnish with a pineapple wedge or a long pineapple leaf and a sprig of fresh mint. Optionally, grate a tiny pinch of nutmeg or sprinkle a light dusting of toasted coconut on top for extra aroma.
