Sweet Potato Fries

Preheat and prepare
Preheat oven to 220°C (425°F). Line two baking sheets with parchment paper. Position oven racks so fries will be in upper-middle and lower-middle positions that can be swapped during baking.

Wash and cut
Scrub the sweet potatoes well. Trim the ends, then cut each potato lengthwise into 1/4- to 1/2-inch thick planks, then cut planks into sticks about 1/4- to 1/2-inch wide so fries are uniform in size for even cooking.

Dry and coat
Place cut fries in a large bowl and pat thoroughly dry with clean kitchen towels or paper towels. Sprinkle the cornstarch over the dry fries and toss until lightly and evenly coated. This helps create a crisper exterior.

Season and oil
In a small bowl whisk together the olive oil, smoked paprika, garlic powder, ground cumin, kosher salt, and black pepper. Pour the seasoned oil over the fries and toss with your hands or tongs until each fry is evenly coated.

Arrange on sheet
Spread fries in a single layer on the prepared baking sheets leaving space between pieces. Do not overcrowd — use both sheets if necessary. For best crisping, place cut-surface down where possible and avoid overlapping.

Bake and rotate
Bake for 12 minutes, then remove the trays. Flip the fries using a spatula and rotate the position of the trays top-to-bottom. Return to the oven and bake another 8–12 minutes, checking at 20 minutes total. Fries should be golden at edges and tender inside. Total bake time: 20–24 minutes depending on thickness and oven.

Optional broil for extra crisp
If you want extra crisp edges, switch oven to broil for 1–2 minutes after baking — watch closely to avoid burning.

Finish and serve
Remove fries to a serving platter. Sprinkle with chopped parsley if using and a light extra pinch of salt to taste. Serve immediately with the dipping sauce or your preferred condiments.

While fries bake, combine the Greek yogurt (or mayonnaise), sriracha, lemon juice, honey (or maple), and salt in a small bowl. Whisk until smooth, taste and adjust seasoning. Chill until ready to serve.
