    Prepare glass rim

    Place the superfine sugar on a small plate. Run the lemon wedge around the outside rim of a chilled coupe or martini glass to moisten it, then gently dip the moistened rim into the sugar so it adheres in an even ring. Set the glass aside to let the sugar settle while you mix the cocktail.

    Dry shake (if using egg white)

    If using egg white for a silkier texture, add the cognac, orange liqueur, lemon juice, optional simple syrup, and egg white to a cocktail shaker without ice. Firmly dry-shake for 12–15 seconds to emulsify and create foam.

    Shake with ice

    Add a generous handful of ice to the shaker (about 1 cup). Shake vigorously for 10–15 seconds until the shaker is very cold to the touch and the exterior is frosty. This chills and dilutes the cocktail to the proper balance.

    Double strain and serve

    Double-strain the cocktail into the prepared chilled, sugared coupe or martini glass to remove ice shards and any coagulated egg bits. If you did not use egg white, simply add all liquid ingredients and ice, then shake and strain.

    Garnish

    Express a lemon twist over the drink (pinch the peel to release oils) and drop or rest it on the rim. Serve immediately.
